French Onion Pork Chop Skillet 09.13.09

It was such a great lazy, rainy day Sunday.  I always enjoy spending quiet afternoons with my husband!  I did need to get up off of my butt and go running.  I hadn't run in nearly a week and the rain sprinkling down on me was not going to stop me.  I completed my whole workout and came home motivated to cook us something delicious for supper.

Tonight I decided to make "French Onion Pork Chop Skillet".  It's another recipe from Kraft and it turned out wonderful. 

Here's what you need:

6 boneless pork chops

2 onions thinly sliced

2 tbsp Worcestershire sauce

1 pkg Stove Top stuffing

1 c shredded mozarella cheese

Now here's what you do:

1.  Heat large nonstick skillet sprayed with cooking spray on a medium high heat.  Add chops and onions; cook 10 minutes or until done, turning chops and stirring onions after 5 minutes.  Remove chops.  Cook and stir onions 5 minutes more or until golden brown.

2.  Stir in Worcestershire sauce.  Return chops to skillet, top with onion mixture.

3.  Mix stuffing mix and 1 1/2 c hot water; spoon around edge of skillet.  Top with cheese; cover.  Cook 5 minutes or until cheese is melted.

It was pretty easy to make and it turned out great! 

Another great week is coming up and I think I'm going to try a couple more recipes.  One of them is a chicken dish in the crock pot.  Mmmm - yummy and easy!

I've begun planning the trip to see our Airman in South Dakota in October.  Should be a lot of fun and a bit of a change of pace from the Texas heat.  I can't wait to see all the fun things up there!

Of course there's Mt. Rushmore and the giant sculpture of Chief Crazy Horse.  But there's also the crazy stuff like Flintstones Bedrock City, Wall Drug, and Corn Palace just to name a few.  Not sure what we'll have time to see but hopefully we'll squeeze in as much as we can.

The Great Garage Cleanup!

I mean seriously, who doesn't love cleaning out their garage?  Or maybe it would be a better question to say who doesn't love a clean garage? 

I have to admit that I relish the sense of accomplishment that comes along with completing the task.  The feeling that I conquered the chaos. 

We decided to tackle the garage today.  Not the whole thing of course as we didn't want to overwhelm ourselves.  We did want to get a portion cleaned out since we hadn't actually attempted any type of cleaning since the remodel last year.  We mostly just pushed the excess out into the garage and shut the door.  Now it was time to open the door and assess the situation.

I debated on whether or not to post a picture of the area we cleaned because it's downright embarrassing.  But now that I have I'm feeling a certain sense of relief.  Kind of like a weight off my shoulders.  I think a lot of us have places in our houses that are a little....shall we say....unkept?  Mine happens to reside primarily in my garage. 

M and I got out there around 9 in the morning on Labor Day and started laboring.  We pulled stuff out, we dusted stuff off, we swept things out....we just got busy.

It was hot out there and we sweated.  A few things we hauled to the curb to "give away".  One man's junk is another man's treasure, right?  For nearly 3 hours we worked and in the end we were very satisfied with our results.

Now this small area is not all that we cleaned in the three hours we were out there but this is one of the places where you can see the most impact. 

So part one of "The Great Garage Cleanup" is complete.  I'm sure that you are all looking forward to seeing the future results of our efforts.  I'll continue my postings as we make progress.  It's kind of therapeutic.

Mini Meatloaves 09.04.09

Headlining tonight's menu was Mini Meatloaves.  I've made this recipe several times and each time it was delicious!  This is another Kraft recipe. 

Using the muffin pan instead of the traditional loaf style cuts the baking time in half.  Who doesn't love saving time in the kitchen?

Here's what you'll need:

1 lb. ground beef

1 pkg. (6 oz.) Stove Top Stuffing

1 cup water

1 tsp. garlic powder

3/4 cup barbecue sauce

3/4 cup shredded cheddar cheese

Here's what you do:

1.  Heat oven to 375*F.  Mix meat, stuffing mix, water and garlic powder.  Press into 12 muffin cups sprayed with cooking spray.

 

2.  Make an indentation in center of each meatloaf with spoon; fill with barbecue sauce.

3.  Bake 30 minutes or until cooked through.  Top with cheese; continue baking 5 minutes or until cheese is melted.

There are variations on the Kraft website that give it just a little bit different flavor.  Let me know if you try it and if you like it!  :)
