Mini Meatloaves 09.04.09

Headlining tonight's menu was Mini Meatloaves.  I've made this recipe several times and each time it was delicious!  This is another Kraft recipe. 

Using the muffin pan instead of the traditional loaf style cuts the baking time in half.  Who doesn't love saving time in the kitchen?

Here's what you'll need:

1 lb. ground beef

1 pkg. (6 oz.) Stove Top Stuffing

1 cup water

1 tsp. garlic powder

3/4 cup barbecue sauce

3/4 cup shredded cheddar cheese

Here's what you do:

1.  Heat oven to 375*F.  Mix meat, stuffing mix, water and garlic powder.  Press into 12 muffin cups sprayed with cooking spray.

 

2.  Make an indentation in center of each meatloaf with spoon; fill with barbecue sauce.

3.  Bake 30 minutes or until cooked through.  Top with cheese; continue baking 5 minutes or until cheese is melted.

There are variations on the Kraft website that give it just a little bit different flavor.  Let me know if you try it and if you like it!  :)

  1. Can you believe it, no one in South Africa makes meatloaf. I don't know why - it's just one of those things. But I'm gonna try this. Will let you know how it was.
