Easy Chicken Parmesan

Another easy recipe was on the menu tonight.

Here's what you need:

Chicken nuggets

Spaghetti sauce

Mozzarella cheese

I'm not to specific on the amounts because it depends on how many you are cooking for.  I usually make about 4 or 5 nuggets a piece for us and adjust the other amounts based on how many nuggets I'm making.  It also depends on how much you like cheese and sauce.

Here's what you do:

Follow the directions for cooking the chicken nuggets.

While the nuggets are cooking begin making the spaghetti noodles.  When the chicken nuggets are about 5 minutes from being done cover them with spaghetti sauce and add cheese on top. 

Once the nuggets are done (the sauce and cheese are bubbly) and the spaghetti is ready it's time to put it all together.

Serve over a bed of spaghetti and enjoy~~

No ice please...

a.k.a.  Ice Allergy

I always order no ice in my drinks.  If I must endure ice I prefer cubes over crushed.  But overall I request no ice please.  I think the ice dilutes my drink and I don't like watered down drinks.

I don't really remember when we started this but a few years ago my family and I started telling the wait staff that I was allergic to ice.  And seriously there is an actual allergy to ice. 

Well it would be more correct to say it's an allergy to extreme cold.  It is called cold-induced urticaria.  So when we tell them that I am allergic to ice the waiter or waitress usually looks at me oddly and they're aren't sure what to say.  We just laugh but seriously....

No ice please.

Biscuit Pizza

Need something quick and easy to make for dinner?  Then you should try my Biscuit Pizza recipe. 

Here's what you need:

1 can of biscuits

Mozzarella cheese

Pepperoni

Spaghetti sauce

Here's how you put it all together:

Preheat the oven to 400.  Place the biscuits on a baking sheet.

Make a small indention on each muffin and fill with 1 tsp of spaghetti sauce.

Place 3 pieces of pepperoni on each biscuit.

Top with a little bit of mozzarella cheese.

Bake at 400 for about 11 minutes.

My Mom

In reflecting on Mother's Day I want to tell you a little bit about my Mom.

She was born in December '45 to Bernard Nicholas Walsh and Dorothy Koehler Walsh. 

She is the youngest of 5 with 4 older brothers, Skippy, Kenny, Jerry and Jimmy.  I just now realized that all of their nicknames end in "y".  Weird that I never noticed it before now.  :::  My Mom has let me know what my uncle's real names are.  I already knew this but I'll update this blog anyway so that y'all will know as well.  :)  Skippy's name was Bernard Jr., Kenny's name was Kenneth, Jimmy's name was James and Jerry's name was Jerome.   :::

She was raised by my Gramma because my Grampa had passed away when she was 14. 

Mom likes to find money.  This "hobby" began in 1984.  She goes walking a lot and finds money everywhere.  To date she's found about $1318 and some change.  Not bad for just picking up a few coins here and there.

One of the things that I like best about my Mom is the fact that she can talk to anyone.  It's like she's never met a stranger.  I also love that she laughs easily and gets excited about things.  Fortunately for me those two particular traits were passed down to me.  I always love meeting people and I love to laugh!

Mom's favorite show is either Walker, Texas Ranger (although she regularly messes up the name) or Hannah Montana.  A friend at work got me an autographed picture from the Hannah Montana cast and she liked it a lot.  My Mom even went to see Hannah Montana: The Movie by herself.  Yes, she's a fan.

My Mom is super awesome at remembering people's birthdays and anniversaries.  She's always sending out cards in envelopes decorated with lots of stickers.  She makes people smile with her thoughtfulness. 

So that's just a little bit about my wonderful Mom.  She's a blessing to anyone she meets and has always been the best Mom any child could ask for.  Happy Mother's Day Mom from your oldest daughter who loves you very much.

Vivian and Edward are in the elevator on their way to the opera.  She turns to him and says, "If I forget to tell you later, I had a really great time tonight."  She has no idea whether or not she really would have a great time.  She was just making a choice.

And that's what I love about this quote.  It's about choices.  The choices you and I have the opportunity to make every day.

Think about it - if everyone made a choice to have a great attitude or chose to make it a great day how much better would the world be? 

Make it a great day today or not....
